I love pesto. I also love spinach. This is my attempt to make pesto even healthier and delicious-er.
Ingredients (~2 cups):
2 1/4 cups fresh basil
3/4 cups spinach
4-5 cloves garlic, to taste
3/4 cup grated Parmesan
2/3 cup olive oil
1/2 cup pine nuts
First, put the oven on high broil. Dump the pine nuts on a small metal pan and throw them in. Toast them for about a minute or until browned.
While they are toasting, grab your food processor. Make sure the blade is in before you dump all the leaves in it!
Put everything in the food processor and blend until smooth.
Note: it is delicious with the spinach, but if you prefer you can leave it out and just add 3 cups basil.
