black beans

Super simple side dish.

Ingredients (makes 2 big servings, I doubled this):

1/4 yellow onion, chopped roughly

1/4 green bell pepper, chopped roughly

splash olive oil

1-2 tsp garlic, to taste

1 can black beans

10ish cilantro leaves, to taste, chopped

1 tbsp cilantro

2 tsp coriander

1 tsp chipotle chile in adobo

water as needed

I first like to drain the beans a little bit to get rid of some of the sodium etc. in the can. Doing that means you have to add an equivalent of water, though.

Sautee the onion in a little bit of olive oil over medium heat. After 2 minutes, add garlic. Cook for 2 more minutes.

Throw in bell pepper and sautee for 3 more minutes or until somewhat soft.

Add your beans and water equivalent to the liquid you lost when draining the beans.

Add all the seasonings. If you don’t want to chop the cilantro you can just tear it up and throw it in.

Simmer until most of the water is gone! The main goal here is just to get everything warmed up and all the flavors mixed together. If all the water evaporates before everything is warm enough just add a little bit more.
